This month's SPT challenge is to feature the number 8. I found this challenge to be difficult until I started dinner last night and realized that I needed 8 potatoes for the recipe I was making.
I made Chicken for a Winter Night out of the Fresh Market and Friends cookbook. It was good (5/7 of the family liked it) and it made the house smell great!
5 slices of bacon
butter if needed
3 boneless chicken breasts cut in 2" chunks
1/2 cup flour mixed with 1/2 teaspoon salt and pepper
4 medium red potatoes-I used 8 baby red potatoes, cut into chunks
2 cloves garlic, minced
1 large onion, chopped
1/2 teaspoon thyme
2/3 cup chicken broth
1/2 cup fresh parsley, chopped (optional)
1/2 cup dry white wine
Preheat oven to 350. Cut bacon in 1/2 inch pieces and cook until crisp. Remove from skillet. Coat chicken in flour mixture. Brown chicken in bacon fat. Do not crowd chicken in the pan. Add butter if you need more fat. As chicken browns, put in 3-quart casserole dish. Add potatoes, onions, and garlic to skillet and brown lightly. Add to chicken. Put thyme and broth in skillet. Heat and scrape crust from skillet. Pour evenly over chicken and scatter bacon pieces on top.
Cover and bake for 40 minutes. Add parsley and wine. Uncover chicken and increase heat to 425. Bake 15 minutes longer or until potatoes are tender.

mmmmm . . . looks delicious! I can almost smell it from here. Nice way to incorporate the 8. Mine was a bit of a stretch, too. (And I forgot to put a pic of ME in it!)
